🍍 No-Bake Pineapple Cream Cheese Cheesecake
Ingredients:
For the crust:
1 1/2 cups (150g) graham cracker or digestive biscuit crumbs
1/3 cup (75g) melted butter
2 tbsp sugar (optional)
For the filling:
8 oz (225g) cream cheese, softened
1/2 cup (120ml) sweetened condensed milk
1/2 cup (120ml) heavy cream, whipped to soft peaks
1 tsp vanilla extract
1 cup (250g) crushed pineapple, well-drained (reserve a few spoonfuls for topping)
Optional topping:
Extra whipped cream
Crushed pineapple
Toasted coconut or pineapple slices for decoration

Instructions:
1. Prepare the crust:
Mix crushed biscuits, melted butter, and sugar in a bowl.
Press the mixture firmly into the base of a serving dish or individual cups.
Chill in the fridge while preparing the filling.
2. Make the filling:
In a large bowl, beat the cream cheese until smooth.
Add sweetened condensed milk and vanilla, mix well.
Fold in the whipped cream gently, then add the drained crushed pineapple.
Spoon the filling over the prepared crust and smooth the top.
3. Chill:
Refrigerate for at least 4 hours, or overnight, until set.
4. Decorate & serve:
Top with extra whipped cream, crushed pineapple, or toasted coconut before serving.
