For the Pastry:
1 sheet puff pastry (store-bought or homemade), thawed
1 egg (for egg wash)
1 tbsp water
For the Lemon Filling:
1/2 cup lemon juice (freshly squeezed)
1 tbsp lemon zest
1/2 cup sugar
2 egg yolks
2 tbsp cornstarch
2 tbsp unsalted butter
For the Lemon Glaze:
1 cup powdered sugar
2–3 tbsp lemon juice
1/2 tsp lemon zest (optional for extra flavor)

👩🍳 Instructions:
1. Make the Lemon Filling:
In a small saucepan, whisk together lemon juice, zest, sugar, egg yolks, and cornstarch.
Cook over medium heat, stirring constantly until thickened (about 5–7 minutes).
Remove from heat and whisk in butter until smooth. Let cool completely.
2. Prepare the Pastry:
Preheat oven to 200°C (400°F).
Cut puff pastry into squares or circles.
Place 1 tsp of lemon filling in the center of each piece, fold as desired (turnover, twist, or open tart).
Brush with egg wash (egg + water).
3. Bake:
Place on a lined tray and bake for 15–18 minutes, until golden and puffed.
Let cool slightly.
4. Glaze:
Mix powdered sugar and lemon juice until smooth and slightly thick.
