Chocolate Cake with Silky Mousse









Ingredients:


For the Chocolate Cake:


1 cup (200g) granulated sugar


3/4 cup (95g) all-purpose flour


1/3 cup (30g) unsweetened cocoa powder


3/4 tsp baking powder


3/4 tsp baking soda


1/4 tsp salt


1 egg


1/2 cup (120ml) milk


1/4 cup (60ml) vegetable oil


1 tsp vanilla extract


1/2 cup (120ml) hot water


For the Silky Chocolate Mousse:


200g dark chocolate, finely chopped


2 cups (480ml) heavy whipping cream, cold


1/4 cup (30g) powdered sugar


1 tsp vanilla extract

Instructions:


1. Make the Cake:


Preheat the oven to 350°F (175°C). Grease and line a round cake pan (8 or 9 inches).


In a large bowl, mix sugar, flour, cocoa, baking powder, baking soda, and salt.


Add the egg, milk, oil, and vanilla. Beat until smooth.


Stir in hot water gradually (the batter will be thin).


Pour into the pan and bake for 30–35 minutes or until a toothpick comes out clean.


Cool completely.


2. Make the Mousse:


Melt the chocolate in a heatproof bowl over simmering water (double boiler) or in the microwave in short bursts. Let it cool slightly.


In a large bowl, whip the cold cream with powdered sugar and vanilla until soft peaks form.


Gently fold the melted chocolate into the whipped cream until smooth and silky.


3. Assemble:


Place the cooled cake on a serving plate.


Spread the chocolate mousse over the cake evenly.
